Particle boards and MDF are less moisture-resistant than plywood, and could swell when exposed to water. They also have a lower screw-holding capacity than plywood. These negatives can be overcome by applying edge banding and sealing all edges completely to prevent exposure to moisture. Use quality hardware and fittings for sturdiness and longevity.
How long your kitchen lasts will largely depend on the materials used. Marine plywood and water-resistant plywood are your best bets for areas exposed to water, as they offer superior protection against moisture damage. MDF and particle board should be completely sealed on all sides and any water spills must be wiped at once.
